Tandoori refers to a cooking technique, where a choice of meat OR seafood marinated in a blend of yogurt and classic Indian spices then cooked in a clay oven called a tandoor. In the tandoor, the food is exposed to ahigh heat resulting in a charred and smokey flavor while retaining its moisture and tenderness.
